Snow Day Memories

Yesterday we finally got enough snow for the kids to actually play in! I am sick with a nasty sinus and respiratory thing that snuck up on me early Saturday morning. I feel miserable! So I pretty much stayed inside catching up my IG stories & trying everything to get better. But that didn’t stop me from enjoying watching the kids play from the comfort of my cozy couch! We haven’t gotten a good snow around here in quit sometime, so it was a nice surprise to wake up to this little winter wonderland.


As soon as Mary Kathryn & Will woke up they couldn’t wait to go outside and play. I grew up in Iowa till I was 8 years old {the age Mary Kate is right now} & we never knew what it was like to not have snow. As a matter of fact we used to get snow here a lot in Northwest Arkansas when I was a kid & then it just kinda stopped. So it was nice to get a little something for the kids to enjoy. 


Will played the most outside and made a snow sculpture that looked a lot like a certain male appendage. I can’t help but laugh & post it because in his eyes it looks like a squirrel. But as grown ups, we always see something much differently from kids (dirty minds, ha!)



And of course our dog, Duchess, saw his sculpture as a bone for her to eat. You can’t make this stuff up, people. I swear I coughed/laughed so much-welcome to my crazy family, y’all!


Later in the day Mark took the kids sledding over to the high school where there is a hill just big enough for them & my peace of mind. Since we don’t get much snow here I don’t have snow boots for the kids. Rain boots, we got em! Snow boots, not so much. So the kids trekked back & forth in their tennis shoes since we only had a little bit of snow on the ground. 



And what’s better than taking a ride on their Mom’s old childhood sled? Yep, this sled has been with me since I lived in Iowa. And it’s so wonderful to see my kids enjoying it too. It may not see the same snow as it once did, but it still sees the same smiles when it’s pulled through any amount of snow. Hope you all enjoyed your snow day as I much as I did, even though it was from the couch, 
watching my kids enjoy life simple pleasures is truly what childhood memories are made of.

From A Private Life To A Public Life

When we decided to enroll our two youngest children in private school it wasn't an easy decision. We knew the financial cost would be pressing. And we knew the judgement would be harsh. When most family and friends hear you are enrolling your children into private school they think you are "too good for public school" and that you are "showing off your wealth." We certainly weren't too good for public school and we are anything but wealthy. For us it was all based on providing our children with the best education, and with daily doses of faith to prepare them for the Godless world around them. I was never good in school, I struggled when we moved from Iowa to Arkansas and I never bounced back. School was hard for me but faith was easy for me. My husband was the opposite. School has always come easy for him and faith wasn't. We wanted to give our children the best of both of us and after lots of research and doing our own homework we decided that private school was the best choice for our children at the time.

Fast forward 3 years later and we found ourselves at a crossroad again. With the buying of an older home, we have found ourselves making constant updates and splurging with a purchase of an in ground pool for our children. We had long decided that this home was going to be our forever home and so we want to make memories now instead of after the children grow up and move away. One in college and one a senior in high school, its very likely we'll have grandchildren before our youngest two are high school graduates. So we wanted to invest in something the whole family could enjoy now and later. But with the purchase of a memory maker like an in ground pool, we're not talking pocket change....it's a big investment. Now with the cost of a pool payment, private school, home repairs, one in college and one with an upcoming jaw surgery and still in braces, we HAD to make cutbacks so we could pay off debt and put money in savings. And sadly that cutback came from private school.

Pulling our children from private school was the hardest decision I had to make. I felt like I was failing them in so many ways. I felt like I was failing God. I felt like a bad Mom. I know, you're probably thinking its completely silly to think like that over a school but it wasn't just a school for us. This is our Church, and I felt like I was abandoning our faith and turning away from God. After so much prayer and financial planning we decided it was time to go from private school to public school.

Now I'm not a sugar coating, lie to my children kind of Mom. I talk to them like young people but I focus on the positive. I do not like saying negative things about one thing to make the other thing sound better. If I'm happy, they're happy and if they are sad, I will talk and listen to their words and we work through it. But I do not lie to make them feel better. Being upfront and honest about the change of schools was hard but they were amazing about it. I mean, when you tell your 7 year old she doesn't have to wear uniforms anymore and she can wear flip flops, it's not hard to get them excited about changing schools. Missing their friends would be hard, but we are pretty good about keeping in touch with others. Already, she's seen old school friends multiple times.

So summer came and went way too fast this year....we started our new school and its been amazing for them. They are adjusting so incredibly well and the school-oh my goodness this school-we all love it!!!!! It's a change we needed and a change that we don't regret. Now we are paying off debt and we are praising God for helping to guide us into this new direction in our children's lives. I think God made this change happen for a reason. My daughter, at 7 years old, has already witnessed to a girl in her class, asking her if she knew about God. And if it wasn't for her time in private school, she wouldn't have thought to ask that question. She's so secure in her faith at only 7 years old, I think God knew this school or that one girl needed someone like Mary Kate, who not only shares her toys but shares her love of God too.

Bubble Up Enchiladas


Looking for something a little different for dinner tonight? This meal is so easy to make and the kiddos will love it! Goes great with a side salad and fills the tummy up to be left satisfied. Hope your tribe enjoys this as much as mine did!

Bubble Up Enchiladas

Ingredients
  • 1 ¼ lbs ground beef or ground turkey
  • 1 (10 oz) can enchilada sauce
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (7.5 oz) can refrigerator biscuits, cut into quarters 
  • 1 cup shredded low fat Mexican Cheese 

  • Preheat oven to 350 degrees. 
  • Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
  • Brown ground beef  in a large skillet or sauté pan. Drain fat.
  • Combine the beef, enchilada sauce, tomato sauce and black beans, together.
  •  Stir the biscuit pieces into the meat mixture.
  • Transfer the entire mixture to the prepared baking dish and spread out evenly. 
  • Bake for 25 minutes. 
  • Remove from the oven and sprinkle the cheese on top. 
  • Bake an additional 10 minutes. 
  • Let stand for 5 minutes before serving.

S'mores Rice Krispie Treats


Need an idea or two for camping with the kids?  These are so good you'll have to give them away to prevent yourself from eating the whole batch! Y'all, these are that amazing!!

S'mores Rice Krispie Treats 

Ingredients
  • 4 cups mini marshmallows
  • 4 tablespoons butter
  • pinch of salt
  • 4 cup rice krispies cereal 
  • 3/4 bag chocolate chips
  • 4 graham cracker sheets
  • 18 large marshmallows

  • In a large pot, combine the mini marshmallows, butter, and salt. 
  • Warm over medium heat until everything melts together. Stir often.
  • Stir in the rice krispies, and remove from the heat.
  • In a large baking pan or dish, line the bottom with the graham cracker sheets
  • Press the rice krispie mixture flat onto the graham crackers
  • Top the rice krispie mixture with the chocolate chips and gently press down.
  •  Next, cut the large marshmallows in half and add them over the top.
  • Broil the marshmallows until brown (about 4 minutes, as you can see I went a tad over that-keeping it real people:)

Homemade Italian Meatballs



Eating meatballs in this family is like eating your veggies. It's a must. We have meatballs at least a few times a month and its pretty much my go to when I have to feed a crowd.

These are great served in crock pot full of spaghetti sauce or on their own. Put them in a zip lock baggie for a quick high protein treat, or eat them on a sub smothered in sauce and mozzarella cheese, or even served them on top a pizza and wash down with a cold beer! These are simply delicious and you can't go wrong any way you choose to eat them!

Homemade Italian Meatballs

Ingredients
2 slices sourdough bread
8 oz ground turkey
3-4 Italian sausage links (casings removed)
1 cup minced onion
1/2 cup chopped fresh basil
1/2 cup freshly grated Parmesan cheese
2 TBSP milk
1 tsp salt
1/4 tsp pepper
4 cloves minced garlic
1 large egg


Preheat oven to 425 degrees
Line a rimmed baking sheet with parcment paper

Process bread in a food processor
Combine crumbs, turkey, sausage, onion, basil, Parmesan cheese, milk, salt, pepper, garlic and egg.
Mix well, go on, get your hands in there and get dirty! 
Use a small spoon to shape turkey mixture into meatballs, dropping them on the lined baking sheet. 

Bake 20-25 minutes or until browned and cooked through.

Baseball Family

Will's dream of playing baseball finally came true this month! Mark & I enrolled him in T-Ball and he is loving every second of it! He's still learning of course, he's only 4 years old, but he's giving it his all. I've never been so proud of him. He has his moments of "this is so boring" and other moments of "I've got this." It's exciting to see him excel at something that he has always enjoyed doing. He's in his element!

My family is just as excited as we are about Will playing t-ball. Recently while visiting my parents, my Mom took out some old photos of relatives from long ago who played on baseball teams in the 1930's. One was even scouted by the St. Louis Cardinals! Which so happens to be our favorite baseball team!

My husband played baseball for many years and I know Will gets his love of the sport directly from his Daddy. But its also runs deeper than that, on my side as well. So when I say we are a baseball family...we really are a baseball family! Pretty exciting stuff for us to learn. Now, play ball!
